Grape info: The world’s third most planted variety, behind only Airén and Chardonnay, Sauvignon’s enduring popularity is down to its distinctive, multi-layered combination of youthful, ‘green’ flavours matched with a keen acidity, capable of producing wines of real substance.
About: Fruit for the Reserve St. Marc is harvested from a number of sites across the Languedoc, amongst the hottest and driest soils of the region. Wines are made under anaerobic conditions to help preserve Sauvignon’s delicate aromatic profile. Fermentation in stainless steel vats followed by a short aging period, also in stainless steel, before bottling.
Tasting Note: A brilliant pale-yellow colour with green hues. Intensely aromatic with notes of lemons, cut grass and gooseberry with a hint of dried herbs.
