Fira Bianco Sartori di Verona

Grape info: A native of Veneto in northeast Italy, Garganega is a late ripening and very productive white variety best known for its role in the production of Soave. Naturally high in acidity, when treated with care, it can produce fine, aromatic wines with notes of lemon, peach, almond and a hint of salinity. Here, Chardonnay adds some body with sauvignon adding an extra aromatic lift.
About: Since the purchase of their first vineyard in Valpolicella in 1898, Sartori have dedicated themselves to the production of some of Verona’s foremost DOCs.
The grapes are left to mature on the vines slightly longer than is usual and partially dried on large mats for ten days. Following fermentation, the wines are matured in large casks for two months, adding a note of creaminess. The wine then matures for further two months in bottle.
