Meerlust Rubicon

Very deep, youthful colour, and intense almost purple hue. Quintessential Rubicon nose with violets, ripe plum, cedar wood, fennel, and intense spiciness. A typical liquorice note also evident on the nose. Still young and intense, the palate is full bodied, structured but packed with fresh dark fruit and rounded tannins. This is a vintage that is more approachable in youth but will provide great complexity with further maturation. Ageing Potential: 10 –20 years.

Grape info: Cabernet Sauvignon’s deep colour, high acidity and high tannin can make for extremely age-worthy wines capable of lasting decades. Its unusually aromatic profile and affinity with oak give it a world-renowned complexity that has formed the basis for some of the world’s finest and most famous wines. Merlot’s soft, attractive fruitiness makes it an ideal blending partner, adding flesh to C’s bones and a counterpoint to its heavy tannins. Cabernet Franc adds aromatics while Petit Verdot offers colour, structure and weight.

The 2018 Rubicon is a classically proportioned blend of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot, every parcel of each variety was fermented separately before undergoing malolactic fermentation in 300L barrels and large foudré. After 8 months in barrel, the components were blended and given another 10 months in barrel for harmonization before bottling.
