Grape info: Often found playing a supporting role in southern French blends, Cinsaut is also ideally suited to the production of rosé. Its natural aromatic profile, including notes of cherries, raspberries and violets, translates seamlessly into a soft, attractively perfumed character; the archetypal compliment to any rosé.

About: A native of the Vaucluse department, Cinsaut is perfectly adapted to southern France’s hot Mediterranean climate. High summer temperatures are mediated by ocean winds, providing the grapes with an ideal, long, slow ripening period.

Grapes are harvested at night when temperatures are low to help retain freshness and acidity. Fermentation takes place in stainless steel tanks before a five-month aging period on the lees, adding texture and complexity.

Tasting note: La Fleur Cecil's delicate fruits and mineral backbone provide a splendid accomplice to seafood canapés.
