Grapes: Corvina, Merlot, Cabernet Sauvignon
Grape info: The most important grape variety used in the blends of Valpolicella, Bardolino and Amarone, Corvina produces wines naturally low in tannins with a prominent acidity and a signature sour cherry note. When dried grapes are used (Amarone, Valpolicella Ripasso, Appassimento) it can produce full bodied wines with notes of leather, spice and chocolate.
About: Since the purchase of their first vineyard in Valpolicella in 1898, Sartori have dedicated themselves to the production of some of Verona’s foremost DOCs.
The grapes are harvested and selected in the vineyard when slightly overripe then partially dried on large mats for 25 days. After fermentation the wine is left to mature in large casks for six months and a further three months in bottle.
Tasting note: An intense perfume of cherries, wild blackberries and raspberries, with the unmistakable aroma of red roses and a hint of pink pepper. Characterful and well balanced with a lingering aftertaste of red currant and cherry.
Character: Cherry, rose, spice.
